Instructions:

  1. Preheat the sous vide water bath to 130°F (54°C).
  2. Slice the watermelon into 1-inch thick rounds and remove the rind. Cut the watermelon rounds into bite-sized cubes.
  3. Place the watermelon cubes or spheres in a vacuum-sealable bag.
  4. Once the water bath has reached the desired temperature, carefully lower the bag into the water bath and clip it to the side of the container. Sous vide the watermelon for 1 hour to infuse the flavors and tenderize the fruit.
  5. While the watermelon is cooking, prepare a large bowl with cold water and ice cubes. Once the cooking time is up, remove the bag from the water bath and immediately place it in the ice bath to cool and stop the cooking process. Let it sit in the ice bath for 10 minutes.
  6. Remove the watermelon from the bag and gently pat it dry with paper towels.
  7. In a serving dish, arrange the sous vide watermelon cubes or spheres. Sprinkle the crumbled feta cheese over the watermelon.
  8. Drizzle the salad with extra virgin olive oil and season with salt and pepper to taste.
  9. Garnish with torn mint leaves for a fresh and fragrant touch.
  10. Serve the sous vide watermelon salad and enjoy!
