Packaging and sous vide
I have used the vacuum chamber now for several sous vide type techniques and I love it. It is obviously not as big as the chamber I learned on in school, so I need to get a couple smaller pans. But this is a great value for the money spent.
We just packaged 88 pounds of fresh made sausage in one pound increments. It made short work of all that product. I adjusted the vacuum time, and we finished the job quickly.
VP215
I love this machine. This is my second one. I have one in Alaska and one in Arizona. This machine protects my fish the best. I can't complain. I recommend this machine to anyone that wants a quality vacuumed packed product.
A dream machine
I purchased this machine to compliment the storage of my freeze dried foods. It has worked perfectly. I like to use the heavier bags an I have adjusted the seal time accordingly. It has a large area that can accommodate larger sized packages. It is very heavy (around 80 pounds or so) and I have put it on a cart with wheels so that I can push it to where I want it to be. It will seal liquids as well as solid items with no problems. It is great to put a meal in a jar and then seal it. I am very happy with this purchase and I would highly recommend it.
Great for the hard-core fisherman
Purchased this chamber sealer because I was tired of the cheap suction sealers not Sealing my catch without it being pre Frozen. Even then it wasn't feeling well. Finally bit the bullet and bought this unit and I never looked back. We have found so many uses at home for this. Whether it be sealing mason jars or marinating meats and fish we're just showing off to friends. Great purchase
Review of VP215
Really impressive machine. I've had this unit for 4 months and love it. After going thru several FoodSavers & Seal-A-Meal machines through the years, I decided to get the VP215 and only regret not getting one sooner. I also got the thicker bags; 4-Mil & 5-Mil so I increased the seal time to compensate. It is quite heavy, so I got an old overhead projector cart, lowered it all the way (29") and set the VP215 on it. Lower shelves hold the bags, Multi Ring bag holder & scale. Now I just wheel it in to the kitchen and I'm sealing delicious smoked pulled pork within seconds. Very cool - would highly recommend it if you're ready for serious equipment.
Great Machine
I have owned this for about year. I have had no problems. I hunt, fish and have a big garden. I love this machine. It is expensive compared to cheap suction type but if you use one these you love it too. It is simple to use I have learned a lot and still learning all the time. I do wish Vacmaster had a forum for owners so we could share what we learned with each other.

Excellent product. Had the foodsaver from Costco but it wasn't getting a good seal and couldn't seal liquids. Although this vp215 was pricey it was worth every penny. I'm glad I bought it.

Excellent product. Had the foodsaver from Costco for a few years but I wanted something heavy duty and this machine does the job. It's a little pricey but well worth the money if you vacuum seal on a regular basis. Would recommend it for anyone.
Finding ways to use it as often as possible
The other reviews attest to what a great, well built, powerful, and easy to use machine this is. I find that with any specialty kitchen appliance, the harder it is to get to, the less fully it gets used. buying in bulk or intentionally cooking to freeze are great uses. we wanted to use it even more. I was able to purchase heavy duty (be absolutely certain of the load capacity as the machine all by itself is very heavy - it will require some bracing and planning but its well worth it to get even more out of your purchase) drawer rails and used them to build a pull out platform for this machine. it is tucked into a base cabinet so that when it is puled out, the lid can open fully and the chamber is just a few inches below counter height. Not only is this a comfortable height to work with, but its almost to easy to use without taking up counter space or having to go to the utility room or garage. now, when we make a recipe that feeds four to six, but there are only two of us, we pull out the in cabinet basket by the machine, grab a bag, slide the machine out, and go straight to the bag with the leftovers. this way, we eat less repetitively, but have "accidentally" prepped another meal for another day, The machine is big, so there isn't a ton of room under it in the cabinet. We found a nice pull out basket we could put under it to store maintenance supplies and a selection of bags that can be periodically replenished from the larger boxes in the pantry. Power was easy in our case as the next under cabinet space over was the dishwasher - we put a small junction box behind the dishwasher and then added a receptacle inside the adjacent cabinet where the sealer lives.

I have used suction type vacuum sealers for years but with the trouble of getting liquid from the meat where the bag seals and then not sealing it was time consuming. the 215 chamber sealer solve a lot of problems with a better vacuum and seal. The vacmaster vp215 works very well,I would recommend to any one wanting a vacuum sealer buy one you will not regret it
