Crispy Goose Fat Potatoes
PREP TIME: 5 minutes | COOK TIME: 0 minutes | SERVING SIZE: 4
2 pounds Idaho potatoes , peeled and cut into large chunks
1 tablespoon parsley, fresh , chopped
1 tablespoon garlic, fresh, peeled and finely chopped
Preheat your oven to 300°F
In a large pot bring a few quarts of well salted water to a strong boil.
Drop in the potatoes and cook for approximately 3 minutes, drain completely and shake dry
In a large baking dish or roasting pan melt the goose fat and add the potatoes gently tossing in the melted fat. Spread the potatoes out in one layer
Bake for 2 hours gently turning every 30 minutes in the fat.
Raise the temperature to 375° and cook for an additional 15 minutes to finish browning.
Remove from the oven and shower the hot crispy potatoes with the salt, chopped parsley and chopped garlic in the hot pan and toss gently to coat and heat the seasonings through
