Candy Cane Cosmo Sous Vide

No one is really quite sure how the cosmopolitan or “cosmo” cocktail got its start by most culinary eggheads point to the late 80’s and early 90’s when it swept the country via television. Thanks to the ladies of, Sex in the City this rose colored, vodka based martini glassed cocktail became a culinary phenomenon. Whether your embarrassed or excited to order one it’s not hard to see its attraction. Easy to drink with enough sweetness to endear itself to a wide range of drinkers it also offers a level of coolness served in a classic martini glass.
As most of you readers are aware the sous vide technique works beautifully with infusions and a candy cane infused vodka not only tastes amazing but it’s a wonderful way to dust off the old “cosmo” for the holidays. Rimming the glass with crushed candy canes really sets it off and an additional cane can’t be a bad thing!

Ingredients:
For the Candy Cane Vodka:

• 1 bottle vodka, 750 ML

• 6 ounces’ candy canes, about one box of smallish candy canes 

For the Cosmo:

• 1-2 small, or as needed candy canes, finely crushed, for garnish as well as whole canes for additional garnish

• 2 ounces’ candy cane infused vodka sous vide

• 4 dashes white crème de menthe sous vide, see recipe

• 2 1/2 ounces’ cranberry juice

• 1 lemon wedge

• Ice cubes

Directions:
For the Candy Cane Vodka:

1. Preheat the SV1 to 135ºF/57ºC

2. Gently crush the candy canes

3. Using the VacMaster Bag Filler and using a large VacMaster bag add the vodka and the candy canes

4. Using a VacMaster chamber machine vacuum seal the bag and carefully place in the water bath of the SV1

5. Cook the vodka for 4 hours and up to 5 hours.

6. Careful remove the bag and chill in an ice bath, strain the vodka into a bottle, and reserve until needed. 

For the Cosmo:

1. Place crushed candy canes on a small plate

2. Wet the outside rim of a chilled martini glass with water.

3. Holding the glass by the stem, gently rotate the rim to coat with the crushed candy canes.

4. In a cocktail shaker, combine candy cane infused vodka sous vide, crème de menthe sous vide, cranberry juice, squeeze of the lemon wedge and the ice.

5. Cover the shaker and shake thoroughly until well combined.

6. Strain into the prepared glass and serve immediately with a candy cane.
